A New Chapter Begins: Globe Restaurant to Rebrand with a Boldly Canadian Twist

Following the closure of Globe Restaurant last April, Big White is getting ready to welcome Cabin Kitchen + Bar — a cozy, Canadian-inspired restaurant concept from longtime Big Whtie chef and renowned restaurateur Ross Derrick. Set to open for the 2025/26 ski season, Cabin promises a fresh take on mountain dining that’s grounded in comfort, heritage, and homegrown flavour.

“We created something new for the hill when we opened Globe,” says Derrick. “Now, almost 18 years later, I own the space and wanted to bring it home.”

What to expect when Cabin opens

While the doors haven’t opened just yet, the concept is already coming to life.

The menu leans into the kind of food Derrick grew up with — nostalgic, hearty, and proudly Canadian. Think Okanagan apple sausage, blueberry pancakes with maple butter, cheddar biscuit Benedicts, and black truffle perogies for breakfast and brunch.

Lunch and dinner will feature dishes like:

  • Grandma Alice’s split pea soup
  • Bison burgers
  • Braised short rib
  • Roasted Chinook salmon

Après classics haven’t gone anywhere either, with cheese fondue and Taste of the Nation cheese boards making a return.

The drink menu will showcase Canadian craft — from small-batch cocktails to eight rotating taps featuring breweries from across the country, plus a 100% Canadian wine list.

“Cabin is about the food I know — beautiful seafood, high-quality Prairie-sourced beef and bison, hearty breakfasts, and damn good cocktails,” says Derrick.

From Global Plates to Canadian Roots

The transformation comes from Ross Derrick, Executive Chef turned owner, who opened Globe at Big White in 2008 and took full ownership in 2022. Known for pioneering the share-plate experience in the region, Ross is now turning his focus toward something even more personal: a celebration of Canadian cuisine in all its multicultural glory.

“Canadian cuisine isn’t just tourtière and maple syrup—it’s the flavours and traditions brought here by generations of immigrants,” says Derrick. “Canada is a melting pot, and our food is great because of it.”

A Personal Legacy on the Plate Ross Derrick’s own story reflects the diverse Canadian experience. Raised in Winnipeg in a Jewish neighbourhood, educated at a Jesuit school, and cared for by a Jamaican nanny, Derrick grew up surrounded by cultural contrasts that united around one thing: a love of food.

His heritage—Ukrainian, English, Scottish—runs deep, as does his passion for sharing stories through cuisine. His great-grandmother, Alice Mailhot Ross, was Canada’s first female architect, and her legacy of bold innovation is something Ross carries forward in his own way: through dishes that connect history, heritage, and flavour.
